True story! Part of the reason I love sleep so much is because it transports me to my favorite time, and meal, of the day…BREAKFAST!!! I used to be one of those people that always ate my breakfast on the go, usually it was pretty non-existent, it definitely didn’t contain much protein and almost inevitably was eaten distracted at my desk. Aubergine or eggplant, call it what you like, happens to be a favorite vegetable of mine. In it’s raw form is it pretty bland, but once grilled or pan-fried its flavor is magically transformed! Eggplant is incredibly popular in European and Middle Eastern cooking, most typically used in casseroles like this delicious moussaka!
Making “rice” substitutes out of vegetables is all the rage right now! Not only is it a great way to get your veggies in and keep your carb macros in check, but it makes your meals that much more satisfying as you can invariably have a whole lot more! At least I know that whenever I measure out a portion of rice it always looks depressingly small in respect to its carb content.
When I was in my teens, I had unlimited access to an incredibly well-stocked pantry. My affinity for junk food was no doubt inherited from my dad. He was careful not to overindulge but I rarely remember a night where a chocolate bar or a bag of Walkers salt and vinegar chips wasn’t devoured! He’d munch away audibly enjoying his treats and remind us to, “keep everything in moderation, including moderation!”
