Low Carb Açaí Bowl
Açaí bowls are notoriously delicious and notoriously high in carbs. Sure they might seem like a healthy option being that they're mostly made of fruit but those juice bars often use sweetened açaí packets and pile on additional unnecessary calories with things like goji berries and honey butter and mounds of almond butter! They're also usually lacking in any protein. Get your açaí fix with this well-balanced, low carb alternative that has all the flavor and taste of your normal superfood bowl.
- 1 sachet Sambazon Acai Berry + Protein + Strawberry
- 100 grams Unsweetened frozen blueberries
- 50 grams frozen banana
- 1/2 scoop Paleoethics protein powder (chocolate or vanilla or strawberry work well!)
- 12 pieces cashews crumbled or chopped
- 5 grams chocolate chips
Put all the base ingredients in a blender or vitamix. Add about 1/4 cup of water or your might like to use unsweetened almond milk - if you do just make sure you add those extra macros in!
Blend until a thick smooth consistency is achieved. You may need to add a little more liquid but don't add too much otherwise it will turn in to more of a smoothie.
Scoop the contents of your base into a bowl and then sprinkle with your chosen toppings. I like crunch toppings like cashews and cacao nibs. Feel free to add a little more fruit as pictured too!
The options for toppings are endless! I just included two for simple ideas, but here are some other ideas for you that are usually popular topping options:
- hemp seeds
- ground flax seed powder (spectrum has some delicious blends)
- almond butter
- goji berries
- cacao nibs
- coconut flakes
- more fruit!
