Protein Banana Bread with Chocolate Chips

Ingredients
  

  • 3 tsp ground cinnamon
  • 1.5 tsp baking powder
  • 3 tsp Pure Vanilla Extract
  • 0.50 tsp baking soda
  • 2 large eggs whites only
  • 3 Bananas brown and spotty
  • 0.25 cup Almond Milk – Vanilla – Unsweetened
  • 90 g GF uncooked rolled oats
  • 4 oz Unsweetened Apple Sauce
  • 90 g vanilla protein powder
  • 2-3 tsp Stevia In the Raw or enough to equate to 1 cup sugar
  • 4 Tbsp Chocolate Chips optional

Instructions
 

  • Pre-heat the oven to 350ºF.
  • In a blender, pulse your rolled oats until they become a fine flour.
  • Next, mix your dry ingredients in one bowl and your wet ingredients in another bowl. You may want to use a mixer/blender/whisk to mix together the wet ingredients.
  • Slowly pour the wet ingredients into the dry mixture.
  • Spray a 9” loaf pan (I used a silicone pan that was super easy to use!) with non-stick cooking spray and then throw it in the oven on 350 for around 35:00 minutes.
  • Allow to cool on a rack. Cut into 8 pieces and devour!

Notes

If you'd rather not use gluten free oats as your flour, you could also use a combination of almond flour and coconut flour as an alternative. This will add more fat to your bread and give it a nuttier taste which I think would prove delicious! Check out our banana walnut muffins that uses these flours instead. 
To make this recipe vegan, you can also substitute the egg whites with a flax egg or use more unsweetened apple sauce. You can also use a plat-based source of protein powder.
