Frozen Yogurt Bark with Chocolate Chips [Recipe]

I’m a BIG fan of greek yogurt. On it’s own, it’s pretty boring but throw in some berries, a sprinkling of granola and even toss in some mini chocolate chips because #yolo and hey! It tastes pretty damn delicious!!! I’ll eat yogurt for breakfast or save it up for dessert. Whenever I have it, it never ceases to disappoint in satisfying my wicked sweet tooth. But I know not all of you enjoy yogurt quite as much as me. But I bet you like ice cream, or maybe even almond bark?! If so then I have a tasty creation for you that falls somewhere between the two. Frozen yogurt bark!

I love this recipe for a couple of reasons; Frozen yogurt bark is a great protein snack that’s macro-friendly and this recipe is so ridiculously easy! All it requires is 3 simple steps:

  1. Stir
  2. Spread
  3. Chill

It’s the perfect recipe for making with the kids and they will absolutely love this as their post-dinner sweet too!

Cut your bark into 15 equal pieces for the same macros as my calculation.

Alternatively, weigh the whole bark, then break the whole thing up into unequal pieces and then just weigh out the amount you want to eat.

For example, let’s say the whole bark weighs 500g. Enter your total servings as 500 in your recipe creator in MFP so that it gives you the macros for each 1gram serving of bark. When you log how much you’re going to eat, you’ll have your serving size as 1g and the quantity will be the number of grams of bark you weigh out. Simple!

Ingredients

  • 500 g 0% fat greek yogurt or yogurt of your choice
  • 2 tbsp maple syrup or sweetner of your choice
  • 1 tsp pure vanilla extract
  • 1/4 cup chocolate chips
  • 1/2 cup fresh strawberries halved & sliced
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
  • 1/3 cup vanilla granola Bear Naked or use granola of your choice

Instructions

  • Line a 9” x 10” baking tray with parchment paper, set aside.
  • In a mixing bowl, add yogurt and mix until smooth.
  • Stir through maple syrup and vanilla extract.
  • Fold in the chocolate chips.
  • Spread your yogurt mixture onto your lined tray, and smooth out.
  • Scatter the strawberries, raspberries, blueberries and granola on top.
  • Set in the freezer for 3-6 hours or overnight, until completely hardened.
  • Remove from freezer and slice into 15 pieces.
  • Enjoy!
