Vegetarian Tacos – Cashew & Mushroom [Recipe]
Neither Jason or I are vegetarian, but we have both experimented with the meatless way of life before we started tracking macros. I keep talking about implementing a day of meatless macros in the house but somehow I feel a little underprepared for such a change. Basically, there’s a lot of talk and no action! But after making this cashew & mushroom taco meat on the weekend I think I’m ready to rise to the challenge.
These tacos were crazy tasty and had practically the same consistency and texture as my ground turkey tacos – I actually think I preferred them! So they might be a little higher in fat and carbs than I’d like BUT I’m pretty confident I could make this work by not going crazy with all the usual toppings people pile on top. I mean do you really need cheese, guac, sour cream, rice & beans?! No! Give me a collard green, some pickled onions and a couple slices of avocado on the side and I’d be golden.
I ended up making these for Jason’s surprise birthday party recently & they were a huge hit with vegetarians and meat-eaters alike! Nobody could tell that they were meatless!
