No Bake Vegan Snickers Bars [Recipe]

When I was in my teens, I had unlimited access to an incredibly well-stocked pantry. My affinity for junk food was no doubt inherited from my dad. He was careful not to overindulge but I rarely remember a night where a chocolate bar or a bag of Walkers salt and vinegar chips wasn’t devoured! He’d munch away audibly enjoying his treats and remind us to, “keep everything in moderation, including moderation!”

One of his preventative strategies for managing his temptations, was to buy bags of fun size chocolate bars from our local bulk-buy store. The medley of chocolates included milky ways, mars bars, bounty and his absolute favorite, mini snickers bars.

Unbelievably, I don’t think I’ve had a snickers bar since I left my parents house at the age of 18! So I’m not quite sure where the urge suddenly came from – I blame Easter – but I decided it was an opportune time to put a recipe to the test and satisfy my cravings for this deliciously nutty, caramel treat.

Ingredients
  

Chocolate Base

  • 4 tbsp Coconut Oil melted
  • 4 tbsp Hersheys unsweetened cocoa powder
  • 2 tbsp low calorie syrup
  • 1/8 tsp sea salt

Nougat Center

  • 3 tbsp Coconut oil melted
  • 2 tbsp unsweetened almond milk
  • 3 tbsp low calorie syrup
  • 1/2 tsp vanilla
  • 50 grams old fashioned oats ground into flour (or sub for almond flour for grain-free)
  • 1/8 tsp sea salt

Caramel Layer

  • 8 Medjool dates pitted
  • 2 tbsp PB2 powder
  • 1 tsp vanilla
  • 2 tsp water
  • 2 tbsp unsweetened almond milk
  • 1/8 tsp sea salt
  • 1/4 cup unsalted peanuts (or any other nuts you have on hand!)

Instructions
 

Chocolate Base

  • Melt the coconut oil in a bowl in the microwave, then add in the other ingredients for the chocolate base and mix well. 
  • Pour the mixture into a tin (5 x 7) lined with parchment paper and then place in the freezer to chill for 10-15 minutes.
  • *At this point, you may want to soak your dates (for the caramel layer) in a bowl of warm water for 10-15 minutes to allow them to soften. 

Nougat Center

  • Mix together the ingredients for the layer of nougat until well combined. If you're using oats, grind them first in a food processor or blender until you have a fine flour. 
  • Pour the nougat layer over the chocolate base and return to the freezer.

Caramel layer

  • Remove your dates from the bowl of water and process all the ingredients for your caramel layer in a food processor or blender saving - I saved a few cashews and crushed them in a baggie so that I could sprinkle on top of this layer.  
  • Spread the caramel mix over the nougat layer. Scatter some of your crushed nuts over the top and lightly press into the caramel. 
  • Return the whole mixture to the freezer and allow to set for approximately 1 hour. 
  • Cut into 12 equal bars & devour! ?
