Neither Jason or I are vegetarian, but we have both experimented with the meatless way of life before we started tracking macros. I keep talking about implementing a day of meatless macros in the house but somehow I feel a little underprepared for such a change. Basically, there’s a lot of talk and no action! But after making this cashew & mushroom taco meat on the weekend I think I’m ready to rise to the challenge.
Would you believe that up until a year ago I’d never had a sloppy Joe?! Yeah I know, where have I been?! Well mostly I was growing up in England and although Joes are fairly common there, the sloppy variety doesn’t feature quite so much.
This recipe involves baking your meatballs. I love it when you can throw things in the oven and forget about them because then you have time to prepare whatever else you need! Zucchini noodles go great with these meatballs so whilst they’re busy cooking in the oven get to spiralizing your zucchini and heating up some marinara sauce on the side. Yummy!

I don’t know about you guys but I love spinach! I love it in salads, smoothies, omelettes and now I even love it in pancakes! ? There’s something about unusually colored pancakes that make them even more appetizing to me. Like those red velvet pancakes I made a little while back. There’s just something about colorful pancakes that automatically produces a flavor explosion in my mouth ? Anyone know why that is?!
You guys this is such a yummy way to eat salmon! I tend to not do anything too exciting with my salmon – grilling it and throwing some guacamole on top is about as creative I get! Seriously though salmon + guac is a heavenly combo! ? Why is that when something is produced in the shape of a patty it automatically tastes 10 times better? I don’t know the answer to that but I do know that this burger recipe made plain old grilled salmon taste anything but plain and old!
Alright so it’s not the most macro-friendly of breakfasts out there but darn it, it does taste good! Every once in a while I like to have a hearty and sumptuous brunch dish like this one and forget about hoarding my fat macros. I can live without peanut butter for one day! This meal is kinda like that 80/20 balance principle we’re always harping on about. Enjoy foods like this 20% of the time, and it’ll keep you coming back to your egg white omelets with veggies for the other 80%. So relax a little and enjoy some Irish comfort in the kitchen.
They say chicken soup is good for the soul well I disagree. It’s not good it’s GREAT!!! When my mum was visiting recently I tried to find some ways that I could sneak extra protein into her meals. She doesn’t like to eat a lot in one go and enjoys soup so I picked up two cartons of Kirkland Signature Chicken Tortilla Soup from Costco. I couldn’t believe the macros! 1 cup (240g) yielded 11g of protein, and just 12g carbs and 3g of fat! I couldn’t resist having a bowl myself and serving it with a side of buttered toast. Mmmm so yummy and so comforting!
